Tandoori Chicken
Tandoori Chicken is a must-have. Whether you are alone at home or hosting a big gathering, you can’t miss this recipe. It has a deep flavor that comes from cooking it in a clay oven. It is not difficult to make at home. Follow our instructions to do this effortlessly.Â
Ingredients
- 2 1/2 pounds bone-in, skinless chicken thighs, and drumsticks
- 2 teaspoons kosher salt, divided
- 2 juicy lemons
- 3/4 cup plain yogurt
- 1/2 medium onion, peeled and quartered
- 5 garlic cloves
- 1 (3/4-inch) piece fresh ginger, peeled and quartered
- 1/2 fresh hot green chile, roughly sliced
- 2 teaspoons garam masala
- 1/2 cup unsalted butter (1 stick), melted
- Lemon wedges
How to Make It?
- Take the halal chicken pieces and make diagonal cuts on each piece about one inch long.Â
- Take a rimmed baking sheet and place your chicken on it.Â
- Now, take a lemon, squeeze it over the chicken, and sprinkle some salt on it. Rub it properly on both sides to marinate the chicken well. Keep it for twenty minutes.Â
- Now, take your yogurt bowl and add it to the blender.Â
- Take the onion, garlic, ginger, green chilies, and garam masala into the blender to make a paste. Once it is blended well, transfer the chicken to a bowl and pour the paste on it. Ensure all the chicken pieces are well coated with the spices and paste.Â
- Leave the chicken overnight or refrigerate it for at least five hours.Â
You can do all this on the last day of Ramadan and remove this mixture the next morning or on Eid day. We are almost done here. It’s time to cook the chicken. You will need a blazing hot charcoal grill. Make sure you prepare it well because the taste comes with it. Take the chicken pieces and adjust them on the charcoal grill. Brush the chicken with butter for a better juicy texture and taste.Â
Grill the chicken over high heat for ten minutes. Once it is cooked from one side, turn the chicken and cook it from the other side, too. You will need a golden brown color on the chicken. Once the chicken is lightly charred, you can remove it from the oven.Â
Place it on your serving dish and squeeze a lemon over it to give a boost to its taste and aroma. Add coriander leaves and lemon slices for garnishing. That’s all. Pat your back. You have made restaurant-style Tandoori Chicken at home.
Kanafeh
Eid-al Fitr is incomplete without a sweet dish. So, if you are looking for a dessert recipe, try Kanafeh. Many of you must have tried it at some fancy restaurant. But today, we will teach you how to make it for your loved ones at home. Here is what you will need for this irresistible Eid recipe.
Ingredients
- 2 cups superfine sugar
- 1 1/2 cups water
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon orange blossom water
- 1/2 teaspoon rose blossom water
- 3/4 cup ghee or unsalted butter
- 16 ounces low-moisture part-skim mozzarella cheese or 4 cups
- 9 ounces ricotta cheese or 1 cup
- 1 pound frozen kataifi (shredded phyllo pastry)
- 1/4 cup finely chopped salted roasted pistachios
How to Make It?
Get all the ingredients ready on your working station before you start.Â
Sugar Syrup
Take a saucepan. Add sugar, 1.5 cups of water, and lemon juice and boil. Start on medium-high heat and reduce heat to medium after some time. Keep stirring once in a while to dissolve the sugar properly. Once it is dissolved, remove it from the heat. Let it boil for about thirty minutes. You can add orange blossom water or rose water for enhanced flavor and taste.Â
Make and Bake
To make Kanafeh, preheat the oven to 400°F. Your rack should be in the bottom third position of the oven. Grease your baking pan with butter or ghee. Add mozzarella and ricotta to a bowl and mix well. Place this bowl in the refrigerator for some time.Â
- Take frozen kataifi, add it to a large bowl, and pour some ghee on it.Â
- Mix them to combine them.Â
- Add half of this mixture into the pan you preheated. Press the mix to make an even layer and cover the bottom well.Â
- Add a layer of cheese on the top. Make it even using your hands or a spatula.Â
- You can spread the kataifi piece you are left with over this filling evenly.Â
- Now, bake it in the preheated oven until the cheese melts. It would take twenty to thirty minutes.
- Once the crust is golden brown, it’s a sign to take it out of the oven.Â
- Let it cool for a few minutes. Once cool, invert the dish to your serving platter.Â
- Drip the sugar syrup you prepared on the cake. Drizzle enough to soak the entire cake.Â
- Dress it well with pistachios and serve with remaining syrup. Â
