Halal Butter Chicken Recipe Ingredients

  • 1 Kg Halal Chicken (Find halal meat shop near you)
  • 1 Bay leaf
  • 2 Medium Onions (finely diced)
  • 1 Tbsp Ginger
  • 1 Tbsp Garlic
  • 1 Tsp Salt
  • 1⁄4 Tsp Black Pepper
  • 1 Tsp Chilli Powder
  • 1 Heaped Tsp Coriander Powder 1 Tsp Cumin Powder
  • 2 Tbsp Tandoori Powder
  • 500g Passata
  • 1⁄4 – 1⁄2 Tsp Cayenne powder (to taste)
  • 1⁄2 Cup Thick Yoghurt Whipped
  • 1 Tsp Dried Fenugreek Leaves
  • 1⁄2 Cup Double Cream
  • Large knob of Butter (bigger the better) (~100g)
  • 2-3 Tsp Lemon Juice
  • Chopped Coriander Leaves (to garnish)
  • 1⁄4 Tsp Garam Masala

Easy Cooking Steps

  1. Heat 4 tablespoons of ghee, add the bay leaf, and cook the onions until they are yellow.

  2.  Before adding the spices, add the garlic and ginger and stir for a short while.
  3. Add all of the spices and give them 10 to 20 seconds to bloom. If you like a hotter version, up the cayenne in 1/4 teaspoon increments rather than the chilli powder.
  4. Add passata once the spices have flowered and simmer for 5 minutes. Oil should float to the surface after a few minutes, and the colour of the passata will alter.
  5. Chicken is added after the whipped yoghurt has been mixed. If you want your chicken to be milder and butterier, omit the yoghurt and instead mix it with 1 cup of double cream.
  6. After cooking for 5 to 10 minutes, include the dried fenugreek leaves.
  7. Add double cream and thoroughly combine.
  8. Add a generous knob of butter after covering the pot and cooking on low heat for a few minutes (once oil rises to top again)
  9. Add lemon juice to taste (I use 3 tablespoons because I prefer tart meals!).
  10. Serve with rice, roti, or naan and garnish with coriander leaves and 1/4 teaspoon garam masala!
