Ingredients for Making Butter Rubbed Roast Chicken

  • 6 tbsp (84 g) unsalted butter (¾ stick), at room temperature
  • ½ cup (83 g) miso paste
  • 1 (1″ [2.5-cm]) piece fresh ginger, peeled and chopped
  • ½ medium white onion
  • 3 Cloves garlic
  • 4 chicken quarters
  • 2 small bok choy, quartered, or 4 baby bok choy, halved
  • 6 oz (170 g) sliced shiitake mushrooms

Steps

  • Preheat the oven to 400°F (200°C). Line a rimmed sheet pan with toil and set aside.
  • In a food processor, combine the butter, miso, ginger, onion and garlic.
  • Process until a paste forms, scraping down the sides as needed. Arrange the chicken quarters on the prepared sheet pan, being caretul not to crowd them. Reserving ¼ cup (55 g) of the butter mixture, gently separate the skin from the chicken and stuff 1 tablespoon (14 g) of the butter mixture under the skin. Rub the outside of the chicken quarters with the remaining unreserved butter mixture. Roast in the oven tor 30 minutes.
  • Remove from the oven and caretully transter the chicken quarters to a plate. Spread the bok choy and shiitake mushrooms on the sheet pan. Dollop the vegetables with the reserved butter mixture and place the chicken quarters over the bok choy. Return the chicken to the oven and roast for another 10 minutes.
  • Serve the chicken quarters with the bok choy and mushrooms.
