  • 2 lbs boneless, skinless halal chicken breasts, cut into bite-sized pieces

  • 1 onion, finely diced
  • 3 cloves garlic, minced

  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander

  • 1 (14.5 oz) can coconut milk
  • 1 cup chicken broth
  • 1 cup diced tomatoes
  • 2 tablespoons chopped fresh cilantro

Instructions:

  1. Heat the oil in a large pot over medium heat. Add the onion, garlic, and ginger and sauté until the onion is softened, about 5 minutes.
  2. Add the cumin, coriander, turmeric, cayenne pepper, and paprika to the pot and stir to combine. Cook for an additional minute.
  3. Add the chicken to the pot and cook until it is no longer pink, about 5 minutes.
