- 2 lbs boneless, skinless halal chicken breasts, cut into bite-sized pieces
- 2 tablespoons vegetable oil
- 1 onion, finely diced
- 3 cloves garlic, minced

- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1 teaspoon turmeric

- 1 teaspoon paprika
- 1 (14.5 oz) can coconut milk
- 1 cup chicken broth
- 1 cup diced tomatoes
- 2 tablespoons chopped fresh cilantro

Instructions:
- Heat the oil in a large pot over medium heat. Add the onion, garlic, and ginger and sauté until the onion is softened, about 5 minutes.
