Steps

  • Slice half of the onions very thinly and keep aside. The remaining onions should be roughly chopped and added to an electric blender along with the ginger, garlic, and chilies.
  • Blend until smooth.
  • Add the ground spices and stir.
  • Sliced onions are cooked in hot ghee and oil while being stirred repeatedly until they turn golden brown.
  • With a slotted spoon, remove the onions from the pan. When the color darkens and oil starts to develop around the edges, add the blended mixture to the pan’s remaining oil and continue to stir.
