Ingredients for Making Halal Goat Cheese Stuffed Shells

For Shells:

  • 12 oz (340 g) jumbo pasta shells
  • 1 tbsp (15 ml) olive oil
  • 8 oz (225 g) honey goat cheese, or
  • 1 tbsp (15 ml) honey + 8 oz (225 g)
  • goat cheese, crumbled
  • 8 oz (225 g) whole-milk
  • ricotta cheese
  • Cooking spray, for baking dish
  • ½ cup (50 g) freshly grated
  • Parmesan cheese
  • ¼ cup (30 g) dried bread crumbs
  • Honey, for drizzling

For Sauce

  • 1 tbsp (15 ml) olive oil
  • 1 lb (455 g) ground chorizo
  • ½ small onion, minced
  • 3 cloves garlic, finely minced
  • 1 (28-oz [800-g]) can crushed tomatoes
  • 1 tbsp (15 ml) tomato paste
  • 1½ tsp (scant 4 g) paprika
  • I tsp kosher salt

Steps for Preparartion

  • Prepare the shells: Preheat the oven to 350°F (180°C) and bring a large pot of salted water to a boil.
  • In the pot, cook the pasta shells until al dente, about 8 minutes. Some of the shells may split; you will need at least 24 whole shells for this dish. Drain the shells and immediately run under cold water. Gently toss the cooked pasta shells with the olive oil to keep them from sticking, then set aside
  • While the pasta cooks, prepare the filling: In a food processor, combine the crumbled honey goat cheese and ricotta. Process until smooth and creamy.
  • Spoon the filling into a piping bag or a gallon-sized (4-L) resealable plastic bag, then set aside until ready to use.
  • Prepare the sauce: Heat a large saucepan over medium-high heat. Combine the olive oil and chorizo in the pan. Cook the chorizo for 5 to 8 minutes. or until cooked through. Lower the heat to medium and add the onion and garlic; sauté until the onion is translucent and the garlic is fragrant, about 3 minutes. Add the crushed tomatoes, tomato paste, paprika and salt and stir until well combined.
  • Spray a 9 x13-inch (23x 33-cm) baking dish with cooking spray, then spor the sauce into the baking dish. Clip a corner of the plastic bag and pipe at a tablespoon (15 g) of filling into each shell. Place the shells in the tomato sauce and bake for 30 minutes.
  • Remove from the oven, sprinkle the stuffed shells with the Parmesan anc bread crumbs, then drizzle with honey before serving. Now enjoy
