Ingredients For Piri Piri Chicken Wings

First of all we will have to make Piri Piri sauce:

Piri Piri Sauce

  • ½ cup (112 g) salted butter (1 stick), melted
  • 1 tbsp (15 ml) olive oil
  • ¼ cup (40 g) diced onion
  • 1½ tsp (scant 8 ml) red wine vinegar
  • 1 to 2 tbsp (15 to 30 ml) Thai chili paste or sriracha, depending on desired heat
  • 3 cloves garlic, grated
  • 4 oz (115 g) pimientos
  • 1 tbsp (15 g) light brown sugar
  • Juice of ½ lime
  • ¼ cup (4 g) fresh cilantro, plus more for garnish

Cooking Method

  • Cooking spray, for pan
  • 12 halal chicken wings, tips discarded, cut into drumettes and flats
  • ½ cup (120 ml) water
  • ½ tsp kosher salt

Steps:

  • Prepare the piri piri sauce: In a food processor, combine the butter, olive oil, onion, vinegar, chili paste, garlic, pimientos, brown sugar, lime and cilantro.
  • Process until well mixed and smooth. Transfer the sauce to a saucepan and bring to a simmer over medium-high heat, then cook for 5 minutes.
  • Set your broiler to high and line a rimmed sheet pan with foil. Place a rack in the sheet pan and spray with cooking spray.
  • Toss the chicken wings with ¼ cup (60 ml) of piri piri sauce. Place the wings and ½ cup (120 ml) of water in a steamer basket in an Instant Pot. Set to cook for 10 minutes on high pressure.
  • Once done, quick release the pressure. Transfer the wings to a large bowl and toss with the salt. Then, arrange the wings in a single layer in the prepared sheet pan. Place under the broiler for 3 to 4 minutes per side, or until crisp.
  • Toss the chicken wings with the remaining sauce and serve garnished with cilantro.
