Halal Rogan Josh Recipe Ingredients

  • 1 lb lamb shoulder or leg, cut into bite-sized pieces (preferably Halal)
  • 2 tablespoons vegetable oil
  • 1 onion, finely diced
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon garam masala
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground turmeric
  • 1 (14.5 oz) can diced tomatoes
  • 1 cup water
  • Salt, to taste
  • Chopped fresh cilantro, for garnish

Instructions For Preparation

  1. Heat the oil in a large pot over medium heat. Add the onion, garlic, and ginger and sauté until the onion is softened, about 5 minutes.
  2. Add the lamb to the pot and cook until it is browned on all sides, about 5 minutes.
  3. Add the cumin, coriander, garam masala, chili powder, and turmeric to the pot and stir to combine.
  4. Add the diced tomatoes and water to the pot and stir to combine. Bring the mixture to a boil, then reduce the heat to low and simmer for 1-1.5 hours, or until the lamb is tender and the sauce has thickened.
  5. Season the rogan josh with salt to taste.
  6. Garnish the rogan josh with chopped fresh cilantro and serve over rice or with naan bread. Enjoy!
