Halal Rogan Josh Recipe Ingredients
- 1 lb lamb shoulder or leg, cut into bite-sized pieces (preferably Halal)
- 2 tablespoons vegetable oil
- 1 onion, finely diced
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon garam masala
- 1 teaspoon chili powder
- 1/2 teaspoon ground turmeric
- 1 (14.5 oz) can diced tomatoes
- 1 cup water
- Salt, to taste
- Chopped fresh cilantro, for garnish

Instructions For Preparation
- Heat the oil in a large pot over medium heat. Add the onion, garlic, and ginger and sauté until the onion is softened, about 5 minutes.
- Add the lamb to the pot and cook until it is browned on all sides, about 5 minutes.
- Add the cumin, coriander, garam masala, chili powder, and turmeric to the pot and stir to combine.
- Add the diced tomatoes and water to the pot and stir to combine. Bring the mixture to a boil, then reduce the heat to low and simmer for 1-1.5 hours, or until the lamb is tender and the sauce has thickened.
- Season the rogan josh with salt to taste.
- Garnish the rogan josh with chopped fresh cilantro and serve over rice or with naan bread. Enjoy!
