Preparation Method 

Take halal chicken pieces of your choice, You can take whole chicken, chicken thigh pieces, or any other pieces of your choice. Wash and clean the chicken thoroughly and then place fine cuts on the chicken pieces. Making cuts is quite easy. Just graph a sharp knife and place small and light cuts on the meat. 

Now take a bowl in which you want to marinate the chicken. Place the chicken in the bowl and add halal yogurt to it. Yogurt is necessary to tenderize it. If your chicken is 1 kg, you can add 250 grams of yogurt to it. Now add one tablespoon of garlic paste and one tablespoon of ginger paste to it. 

To add a hint of tangy flavor, add one lemon juice to it. Now comes the time to add spices. Spices can vary according to your taste. There are options available like you can buy tandoori chicken masala from any market and add to it. The other way is to add spices like:

  • Kashmiri chili powder (as per your spice preferences)
  • Turmeric powder (half to one teaspoon)
  • Garam masala powder (One teaspoon)
  • Black Pepper powder (As per your taste)
  • Cumin powder (One teaspoon)

Add all the spices and also add salt to it. You will be required to add at least 1 to 2 spoons of salt to 1 kg chicken. This can also depend on your taste preference. 

Kashmiri chilli powder is necessary because it adds a lovely red color to the chicken and you will not need to add food color. Now, to bring all the marinade together, two to three tablespoons of oil to it. Choose vegetable oil for this purpose. 

Mixing and Marination

Now it is the time to mix the ingredients properly. Put on your gloves and mix the ingredients properly using both your hands. Apply the marinade thoroughly on the chicken pieces and cover the marinated chicken with plastic wrap for better absorption of spices into the chicken.

Done with marination? Now leave the marinated chicken for a few hours or overnight.

Cooking Method

Now comes the time to cook the marinated tandoori chicken. For this just take a pan and add some oil. Don’t fill it thoroughly with the oil because we are not going to deep fry it. Just add a few tablespoons to grease the pan. Now add a spoon of butter for a better aromatic flavor. 

Once the oil is heated place the chicken pieces to it and cover the lid. Turn the flame to medium so that the chicken gets cooked in its steam. In this way, the chicken will get completely cooked from inside and outside. 

Once the chicken is cooked, it is time to give it a smoky taste. For this purpose, you will need a coal and aluminium foil. Place the foil on the cooked chicken and add a burning coal over it. Add a few drops of oil on the coal and cover the lid so that the essence of the coal gets soaked inside the chicken. Leave it for five minutes and then remove the lid.

Cooking Method

Another process to do this is using a smoke machine. Place the chicken in the bowl and cover it with plastic foil with the pipe of the machine inside the bowl. Now turn on the machine and let the smoke cover the bowl. Leave it for at least five minutes and then remove the lid.

Now your chicken is cooked, place it on a plate and serve hot with naan and chutney.
